Irish Nachos

Irish Nachos consist of crisp kettle-style potato chips topped with melted cheddar cheese and crumbled bacon for a rich, savory base. Finished with fresh diced tomatoes, chives, and a dollop of sour cream, they offer a satisfying mix of crunchy, creamy, and fresh elements. This dish is a quick way to enjoy nacho flavors using potato chips as a convenient substitute for traditional tortilla chips.

Description

Irish Nachos start with a layer of hearty kettle-style potato chips arranged on a baking tray. A generous layer of shredded cheddar cheese is evenly spread and topped with cooked crumbled bacon. Baking this until the cheese melts creates a gooey, savory topping that contrasts with the crisp chips. Fresh diced tomato and finely chopped chives add brightness and color once baked. A spoonful of sour cream finishes the dish, balancing the richness with creaminess. Turning the oven rack away from the heating element helps prevent burning or over-browning.

This recipe is suitable as an appetizer or casual snack, offering a rich and layered flavor without complicated preparation. The use of potato chips rather than homemade fries or potatoes simplifies the process and creates a satisfyingly crunchy texture throughout.

To enhance cheesiness, layering chips and cheese alternately can be done for a more even melt among the chips. Care should be taken when sprinkling cheese to avoid it dripping onto the oven floor, which could cause burning and smoke.

Ingredients

Servings
  • 4 cups potato chips kettle style
  • 2 cups cheddar cheese shredded
  • 1/2 cup Bacon cooked crumbled
  • 1/4 cup chives finely chopped
  • 1/3 cup sour cream
  • 1/4 cup diced tomato

Instructions

  1. Preheat the oven to 350 degrees
  2. Place the chips on a sheet pan or in a pie plate.
  3. Sprinkle the cheese evenly over the chips, then add the bacon on top of the cheese.
  4. Bake for approximately 5 minutes or until cheese is melted,
  5. Top with sour cream, tomato and chives and serve immediately.

Notes

  • Keep a distance of at least 3 inches between the nachos and the upper heating element in the oven to prevent burning.
  • Layer cheese and chips alternately for a more even cheesiness throughout the dish.
  • Avoid letting cheese hang over the pan edges to prevent drips that can burn in the oven.
