Irish Pub Style Potato Nachos

Irish Pub Style Potato Nachos layer crispy sliced Yukon Gold potatoes with shredded cheddar cheese and crumbled bacon or corned beef, baked to melt the cheese and topped with green onions, tomato, jalapenos, and served with sour cream and guacamole. The potato slices provide a sturdy, golden base differing from traditional tortilla chips, resulting in a hearty snack or appetizer with rich, savory flavors and a blend of textures.

Description

This recipe begins by slicing Yukon Gold potatoes thinly, soaking them in cold water to remove excess starch, and drying thoroughly. They can be baked until crispy or fried lightly to develop a golden-brown exterior. The layering combines these potatoes with sharp cheddar cheese and bacon or corned beef to build a flavorful base. Baking at a high temperature melts the cheese and melds flavors.

The finished dish is topped with fresh diced tomato, sliced jalapenos, and green onions to add brightness and heat. Accompaniments of sour cream and guacamole provide cool, creamy contrast. The use of potatoes instead of tortilla chips yields a filling, rustic dish favored in Irish pubs or similar settings.

This dish is ideal for sharing and pairs well with beer or casual drinks. Preparation methods allow baking or frying potatoes depending on preference. The layering technique ensures even cheese distribution and savory bites throughout.

Ingredients

Servings
  • 5 large potato scrubbed, Yukon gold variety
  • 2 cups cheddar cheese shredded
  • ½ cup Bacon or corned beef if you prefer, cooked and crumbled
  • 4 green onions sliced
  • 1 tomato chopped
  • neutral cooking oil for frying or baking, both directions below, generic cooking oil
  • toppings as desired jalapenos, sour cream and guacamole

Instructions

TO PREPARE POTATOES

  1. Slice potatoes ¼″ thick and place in a bowl of cold water for 20 minutes. Drain very well and dry potatoes with paper towel.
  2. If baking preheat oven to 400°F. Toss potatoes with ¼ cup olive oil. Place on a parchment lined pan and bake 30-35 minutes or until browned and crispy.
  3. If frying, preheat oil to 375°F. Place potatoes into hot oil for about 7 minutes per batch or until lightly browned. Drain on paper towels.

NACHOS

  1. Preheat oven to 475°F.
  2. In a bowl, combine cheese, corned beef (or bacon) and half of the green onions. Layer half of the potatoes in an oven proof skillet or dish (a large pie plate works well). Top with half of the cheese.
  3. Repeat layers. Bake 15-20 minutes or until cheese is melted through.
  4. Remove from oven and top with remaining green onions, tomato, and jalapeno. Serve with guacamole and sour cream.
