Irish Roasted Cabbage Low Carb Pizza Recipe
Description
The Irish Roasted Cabbage Low Carb Pizza combines thick cabbage slices roasted until tender with crispy edges. After roasting, each cabbage steak is brushed with spicy whole grain mustard, layered with thin strips of deli corned beef and shredded Dubliner cheese, then warmed until the cheese melts. The roasting softens the cabbage but maintains structure, supporting the toppings without sogginess. The corned beef adds a salty, meaty flavor that pairs well with the sharp and nutty Dubliner cheese. Fresh chopped scallions finish the dish lending bright, oniony accents.
This dish can be served as a hearty appetizer or main, providing a low-carb alternative to traditional pizza. Its combination of textures makes it satisfying—crisp cabbage edges, melted cheese, and tender meat merging together. Roasting the cabbage at high heat also intensifies its flavor through caramelization. The mustard adds a subtle kick and balances the richness.
According to notes, corned beef can be substituted with pastrami, and Dubliner cheese can be replaced by other Irish cheeses or sharp cheddar, making this recipe adaptable to ingredient availability while maintaining its spirit.
Ingredients
- 1 tablespoon olive oil
- 1 large green cabbage
- 2 tablespoons whole grain mustard (spicy)
- 1/2 pound corned beef deli slices
- 4 ounces Dubliner cheese
- 1/4 cup scallions chopped
- salt
- black pepper
Instructions
- Preheat the oven to 450 degrees F. Line a large rimmed baking sheet with parchment paper and set aside.
- Hold the root-end of the cabbage. Slice the cabbage into six 3/4 inch rounds. Lay the cabbage rounds on the baking sheet and brush with olive oil. Then sprinkle generously with salt and pepper.
- Roast the cabbage steaks in the oven for 15-20 minutes, until crispy around the edges.
- Meanwhile, shred the Dubliner cheese. Chop the scallions. And slice the deli corned beef into 1/2 inch ribbons.
- Brush 1 teaspoon whole grain mustard over the top of each roasted cabbage steak. Then top with corned beef and shredded cheese. Place the cabbage pizzas back in the oven for 5 minutes to heat the corned beef and melt the cheese.
- Sprinkle with chopped scallions and serve warm.
Notes
- Deli corned beef can be swapped with pastrami if unavailable.
- Dubliner cheese may be replaced with any Irish cheese or sharp cheddar as alternatives.
