Description

This Israeli Couscous Salad starts with simmering couscous in salted boiling water until tender, then cooling it to room temperature. Fresh vegetables including halved cherry tomatoes, chopped English cucumber, and diced purple onion are combined in a bowl with drained chickpeas and chopped fresh parsley and mint.

The dressing is made by shaking lemon juice, olive oil, and salt together until combined and added just before serving. Tossing the salad right before eating keeps the herbs and vegetables vibrant. The salad balances the chewy pearl couscous with crunchy vegetables and bright, citrusy notes from the lemon dressing. It is suited as a light lunch, side dish, or picnic addition.

  • 1 cup couscous uncooked
  • 16 oz chickpeas drained and rinsed, canned
  • 2 cups cherry tomato halved
  • 1 English cucumber chopped
  • 1/2 onion chopped, medium purple
  • 1/4 cup parsley chopped, fresh
  • 3 tbsp mint chopped, fresh

 Israeli Salad Dressing

  • 3 tbsp lemon juice
  • 1/4 cup olive oil
  • 1 tsp salt adjust to taste

Instructions

  1. In a medium size pot, bring water and salt to a boil. Add in couscous and oil to the pot, stir to combine, and let it simmer for about 10 minutes. Remove from the pot and let it cool to a room temperature.
  2. Chop all the veggies and herbs. Drain and rinse chickpeas. Place couscous on the bottom of a large bowl. Add veggies, chickpeas, and herbs.

 Israeli Salad Dressing

  1. In a small jar, combine all the dressing ingredients. Cover with a lid and shake until the dressing is well combined.
  2. Add the dressing to the salad right before serving. Toss together and enjoy.
