  • 3 cups beef broth or chicken broth
  • 15 ounces diced tomatoes 1 can, with juices, canned
  • 15 ounces cannellini beans 1 can, or white kidney beans, drained and rinsed, canned
  • 2 tablespoons tomato paste
  • 1 bay leaf

Instructions

  1. Brown sausage and onion in a large pot until no pink remains. Drain any fat.
  2. Add remaining ingredients and bring to a boil. Reduce heat and simmer 15 minutes or until carrot is tender and flavors have blended.
  3. Discard bay leaf and serve.
  4. Garnish with parmesan cheese and parsley if desired.

Notes

  • When substituting ground beef for sausage, increase seasoning and consider adding chili flakes to enhance flavor.
