Italian Chopped Salad

The best Italian chopped salad, packed with fresh vegetables and a light and zesty champagne vinaigrette. Perfect for a quick and healthy lunch or dinner, and can be easily made vegan!

Ingredients

Servings

Chopped Salad:

  • 2 cups romaine lettuce chopped
  • 1 cup endive chopped
  • ¼ cup red onion chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup Pepperoncini chopped
  • ¼ cup roasted red bell pepper
  • ¼ cup kalamata olives
  • ½ cup fresh parsley chopped
  • ¼ cup fresh basil
  • ¼ cup Parmesan Cheese grated, can substitute vegan hard cheese
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper adjust to taste

Champagne Vinaigrette:

  • ¼ cup champagne vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup substitute honey
  • ½ cup olive oil
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper adjust to taste

Instructions

  1. In a large mixing bowl, combine the Romaine lettuce, endive, red onion, cherry tomatoes, cucumber, pepperoncini, roasted red peppers, olives and parsley.
  2. In a small mixing bowl, whisk together the champagne vinegar, Dijon mustard, and honey or maple syrup.
  3. Slowly drizzle in the olive oil while whisking the mixture continuously until the vinaigrette is emulsified and well combined.
  4. Sprinkle parmesan cheese and basil over the top of the salad.
