Description
This Italian Chopped Salad features a mix of chopped romaine and slightly bitter radicchio lettuce combined with fresh mozzarella cubes and matchstick-cut dry Italian salami. Canned chickpeas and sliced black olives add substance and a salty depth, complemented by diced yellow bell pepper, cucumber, pepperoncini slices, grape tomatoes, and chopped red onion to introduce crunch and acidity.
The dressing, whisked from extra virgin olive oil, red wine vinegar, Dijon mustard, grated garlic, oregano, and crushed red pepper flakes, is seasoned with salt and freshly ground black pepper. Ingredients
- 1 head romaine lettuce roughly chopped
- 1 cup radicchio lettuce chopped
- 8 ounces fresh mozzarella cut into 1/4-inch cubes
- 4 ounces dry Italian salami cut into matchsticks
- 1 (15-ounce) can chickpeas rinsed and drained
- 1 (2.25 ounce) can black olive rinsed and drained, sliced
- 1 yellow bell pepper diced
- ½ English cucumber diced
- 6 Pepperoncini sliced
- 1 cup grape tomato halved
- ⅓ cup onion red, chopped
- ½ cup Parmesan Cheese shaved
for the dressing
- ½ cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- 1 clove garlic grated
- ¾ teaspoon oregano dried
- ⅛ teaspoon red pepper flakes crushed
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
Instructions
- To assemble the salad, place romaine and radicchio in a large bowl; top with mozzarella, salami, chickpeas, olives, bell pepper, cucumber, pepperoncini, tomatoes and red onion.
- Pour the dressing on top of the salad and gently toss to combine. Top with Parmesan.
For the dressing
- In a medium bowl, whisk together olive oil, vinegar, Dijon, garlic, oregano and red pepper flakes; season with salt and pepper, to taste.
