Italian Corn Salad combines fresh tomatoes, basil, grilled corn and parmesan cheese in the perfect summer salad recipe that's made in under 30 minutes!

Ingredients
- 4 ears corn grilled
- 1 cup cherry tomatoes halved
- ¼ cup red onion diced
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- 2 cloves garlic crushed
- 2 tbsp fresh basil chopped
- ½ cup Parmesan Cheese grated
Instructions
- Remove the kernels from the ears of grilled corn using a sharp knife.
- Place the corn in a large bowl with the tomatoes and red onion.
- Whisk the olive oil, balsamic vinegar, garlic and basil together in a small bowl.
- Pour the dressing over the corn and toss.
- Add the parmesan cheese, mix together and serve.
