Italian Crockpot Chicken
Description
This recipe places seasoned chicken breasts in a crockpot coated with non-stick spray. A mixture of cream of chicken soup, cubed room-temperature cream cheese, and dry Italian dressing seasoning is poured over the chicken. It slow cooks on low (5-6 hours) or high (4 hours) until the chicken is tender enough to shred easily with forks.
After shredding, the creamy sauce combines with the chicken pieces, creating a thick, flavorful mixture. Prepared egg noodles serve as a base, absorbing the sauce for a satisfying texture contrast.
The dish can be adapted by adding vegetables like peas or broccoli during the last hour of cooking for a complete meal. Chicken thighs may be used instead of breasts, and salt is generally not added due to seasoning in the canned soup. Leftover sauce and chicken can be reheated gently.
Ingredients
- 4 chicken breast boneless skinless
- 1/2 tsp black pepper ground
- 2 cream of chicken soup 10.5 oz each, canned
- 8 oz cream cheese room temperature, cubed
- .6 oz dry salad dressing mix Zesty Italian
- 16 oz egg noodles extra wide
Instructions
- Spray cock pot liner with non-stick spray. Place chicken in crock pot. Season with black pepper.
- In a small bowl cream together soup, cream cheese and dressing mix. Pour over chicken.
- Cook on low for 5-6 hours or high heat for 4 hours.
- When cooking time is up carefully shred chicken with two forks and mix it up into the gravy in the crock pot.
- Prepare noodles according to package directions and serve with chicken mixture over prepared noodles.
Notes
- Add vegetables such as peas or broccoli during the last hour for a complete meal.
- Spray the crockpot or use liners to simplify cleanup.
- You may substitute boneless skinless chicken thighs or a combination of thighs and breasts.
- Season with salt after cooking if needed, as the soup contains salt already.
- Serve over egg noodles, rice, or your favorite pasta shape.
