This 20-minute Italian Grinder Salad is loaded with Italian deli meats, cheese, fresh vegetables, and tangy dressing. All the flavors of a classic Italian sub in a hearty, satisfying salad.

Ingredients
Salad Ingredients
- 3 romaine lettuce hearts
- ¼ pound salami chopped
- ¼ pound pepperoni chopped
- ¼ pound Capicola chopped
- ¼ pound Provolone cheese diced
- ½ red onion diced
- ⅓ cup banana peppers chopped
- 1 cup cherry tomatoes halved
- ¼ cup Parmesan Cheese grated
Dressing Ingredients
- ½ cup mayonnaise
- 2 tablespoons vinegar white or red wine vinegar
- 1 teaspoon banana pepper juice
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Chop the romaine lettuce, salami, pepperoni, capicola, provolone cheese, red onion, banana peppers and cherry tomatoes. Add them all to a large mixing bowl and sprinkle with parmesan cheese.
- Combine the mayonnaise, vinegar, banana pepper juice, garlic powder, salt, and pepper in a small bowl and whisk well.
- Pour the dressing over the salad and toss until all the ingredients are combined.
Notes
- I like to chop all the meat and cheese the night before and store them in separate containers. This makes throwing the salad together super quick when you're ready to eat!
- Don't dice your ingredients too small. Aim for roughly ½-inch pieces for the meats and cheese.
- Mix up the meat to suit your preferences. Ham, turkey, or prosciutto all work well in this salad.
- I prefer red wine vinegar for its classic Italian flavor, but white vinegar or apple cider vinegar work too.
- While romaine gives you that perfect crunch, you can definitely use iceberg lettuce or a spring mix.
- You can always use a bottled creamy Italian salad dressing as a shortcut
