Italian Meatloaf
Description
Italian Meatloaf brings together ground beef and bulk Italian sausage for a rich base, mixed with a soaked bread base that helps retain moisture. The addition of minced onion, garlic, flat-leaf parsley, and fresh oregano adds aromatic layers. Worcestershire sauce contributes a subtle tanginess while beaten egg and breadcrumbs bind the ingredients. Parmesan, mozzarella, and fontina cheeses are incorporated to add savory depth and creamy richness throughout the loaf.
The meat mixture is gently blended to avoid toughness and then formed into a loaf shape, typically baked in a loaf pan. This controlled baking environment promotes even cooking and a uniform shape ideal for slicing. The cheese within the loaf melts during baking, offering both texture and flavor variation. Once cooked, this meatloaf serves as a satisfying entrée that pairs well with classic sides like mashed potatoes or sautéed vegetables.
Ingredients
- 1 cup Italian bread crusts removed, cut into 1 inch cubes, or white bread
- 1 tablespoon milk
- 1/2 cup white onion minced
- 3 cloves garlic minced
- 1 tablespoon flat leaf parsley minced, plus more for garnish (optional)
- 1 tablespoon oregano minced, fresh
- 1 teaspoon kosher salt coarse
- 1/2 pound ground beef lean
- 1 pound Italian sausage bulk
- 1 tablespoon Worcestershire sauce
- 1 egg lightly beaten
- 3/4 cup bread crumbs
- 1/4 cup Parmesan Cheese finely grated
- 1 cup mozzarella shredded, divided
- 1 cup fontina cheese shredded, divided
- 3/4 cup marinara sauce divided, plus more for for serving
Instructions
- Preheat the oven to 400°F and prepare a loaf pan or meatloaf pan with cooking spray or parchment paper. Set aside.
- In a small mixing bowl, toss the cubed bread with the milk. Set aside for 3-4 minutes to absorb. Milk should be pretty well soaked up.
- In a large mixing bowl, or the base of a stand mixer, combine soaked bread, onion, garlic, parsley, oregano and salt. Mix to combine into a paste.
- Add the ground beef and sausage, breaking into small pieces.
- Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
- Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
- Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
- Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
- Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.
