Italian Pepperoni Rollups

Italian Pepperoni Rollups feature a seasoned cream cheese mixture spread over flour tortillas, layered with pepperoni and finely chopped vegetables. Rolled tightly and chilled, they make a flavorful cold appetizer or snack with a creamy, tangy filling balanced by savory pepperoni and fresh peppers and mushrooms. The mixture mingles Italian seasoning with cheeses and sour cream for a rich spread that contrasts the crisp tortilla when fresh.

Description

These rollups start by blending softened cream cheese with garlic, sour cream, Parmesan, shredded Italian cheese, and Italian seasoning. This flavorful spread is evenly distributed over flour tortillas, which are then topped with pepperoni slices. A layer of finely chopped yellow and orange peppers plus fresh mushrooms adds subtle crunch and freshness. Rolled up tightly and wrapped in plastic wrap, they are refrigerated for at least two hours to allow flavors to meld and the rolls to set.

The chilled rollups are sliced into pinwheels, revealing colorful layers of creamy cheese, savory pepperoni, and vibrant vegetables. The Italian seasoning and garlic add depth to the creamy cheese base, while the fresh veggies brighten the texture. Using different tortilla flavors like spinach or sun-dried tomato can add a subtle variation.

They are suitable for serving as a cold snack, appetizer, or party finger food. The rolls are best eaten the same day for a firmer tortilla texture but can be enjoyed a couple of days later when the tortilla softens. The recipe allows for substitutions like adding onions or olives, provided the vegetables are finely chopped to maintain roll integrity.

Notes emphasize preference to eat these on the same day to keep the tortilla chewier, and caution against overfilling with vegetables to prevent the roll from falling apart. Calorie counts vary depending on brands used and portion size.

Notes

  • For best texture, consume rollups the same day to keep tortillas firmer and chewier.
  • You can prepare in advance and eat a day or two later, but tortillas will soften as they sit.
  • Feel free to add other finely chopped toppings like onions or olives, but avoid adding too many to keep the roll intact.
