Italian Prosciutto Potato Salad

This great summer side gets an Italian makeover with prosciutto and roasted red peppers.

Ingredients

  • 5 potato halved or whole, boiled in water and cooled, medium
  • cup roasted red pepper chopped, jarred
  • 2 green onions chopped
  • 1 celery chopped, large stalk
  • salt to taste
  • black pepper to taste
  • ¾ cup mayonnaise
  • 1 Tbsp. red wine vinegar
  • 1 tsp. granulated sugar
  • 1 tsp. mustard powder ground
  • ½ tsp. paprika
  • 5-6 lices prosciutto crisped in a fry pan, and crumbled
  • 2 Tbsp. parsley chopped, fresh

Instructions

  1. Slice the potatoes into large bite sized chunks and add them to a large bowl. Add in the roasted red peppers, green onions, and celery. Add salt and pepper to taste. Mix together the mayo, vinegar, sugar, mustard and paprika. Add to the potatoes. Fold in about 3/4 of the prosciutto. Cover and chill until ready to serve. Top with the remaining prosciutto and parsley.
