Italian Sausage and Chicken Soup

This creamy and spicy Italian Sausage and Pulled Chicken Soup is a delicious fusion of flavors that's perfect for warming up on a chilly day. It is the perfect hearty soup for those cold winter evenings.

Ingredients

  • 1 rotisserie chicken or Smoked Chicken
  • 1 Pound Italian sausage hot
  • 15 Ounce black beans Drained
  • 15 Ounce Ranch Style Beans
  • 15 Ounce red kidney beans light
  • 15 Ounce corn southwest style
  • 32 Ounce chicken broth
  • 3 Tablespoons ranch seasoning
  • 1 Tablespoons taco seasoning
  • 3 Hatch green chiles Or 4 Ounce can diced green chiles
  • 8 Ounce pepper jack cheese Shredded, or habanero jack cheese
  • 8 Ounce cream cheese
  • 1 red onion Diced
  • 3 garlic Minced, cloves

Instructions

  1. Heat a Dutch oven or soup pot over medium heat. Brown the Italian sausage, breaking it up as it cooks.
  2. Once the sausage is cooked, add the diced red onion and cook for 4-5 minutes, until softened. Add in the diced green chiles and minced garlic and cook for 1-2 more minutes.
  3. Once the vegetables are cooked, drain the excess grease.  Pour in the chicken broth or chicken stock along with the rest of the ingredients.
  4. Bring the soup to a boil, then reduce heat to low.  Stir to make certain all of the cheese is fully melted. Simmer for 20-30 minutes then reduce to low until you are ready to serve.
