Italian Turkey Meatball Sheet Pan Dinner

This Italian Turkey Meatball Sheet Pan Dinner features seasoned ground turkey formed into meatballs and baked alongside broccoli, cauliflower, and red bell pepper. The vegetables roast until tender and slightly caramelized while the meatballs cook through, creating a wholesome, one-pan meal with balanced flavors and textures. The use of fennel seeds, paprika, and crushed red pepper adds subtle warmth and aromatic notes to the dish.

Description

The recipe begins by roasting cauliflower, broccoli, and red bell pepper tossed in olive oil, salt, and pepper on a baking sheet. Meanwhile, turkey meatballs are prepared by combining ground turkey with breadcrumbs, chicken broth, egg, fennel seeds, paprika, crushed red pepper, and seasoning. After the vegetables roast partially, the meatballs are arranged alongside and baked together until cooked through. This method allows the vegetables to caramelize and the meatballs to remain moist and flavorful.

The result is a balanced meal with roasted vegetables providing a tender-crisp contrast to flavorful, well-spiced turkey meatballs. This approach combines protein and vegetables conveniently on one pan, simplifying preparation and cleanup.

Ingredients

Servings
  • 10 ounces cauliflower florets
  • 10 ounces broccoli florets
  • 1 red bell pepper seeds removed and cut into 2 inch pieces, large
  • 2 tsp olive oil
  • 1 tsp kosher salt
  • black pepper (to taste)
  • 1/4 cup breadcrumbs (plain, seasoned or gluten-free)
  • 1/4 cup chicken broth
  • 1 egg large
  • 1 tsp fennel seeds
  • 1/2 tsp paprika sweet
  • 1/2 tsp crushed red pepper
  • 1 lb ground turkey 93% lean

Instructions

  1. Preheat the oven to 400F degrees.
  2. Put the cauliflower, broccoli and peppers onto a baking sheet and mix with the oil, 1/4 tsp salt, and pepper.
  3. Spread into an even layer. Bake for 20 minutes.
  4. While the vegetables are baking, combine the breadcrumbs, chicken broth, egg, spices, and remaining 3/4 tsp salt in a large bowl and mix well to combine.
  5. Add the turkey and mix using a fork to fully combine everything, careful not to overwork.  Form into 16 meatballs.
  6. After 20 minutes, remove the pan from the oven, stir, push the vegetables to one side and put the meatballs on the other side of the pan, making sure everything has a little bit of room.
  7. Bake until the meatballs are cooked through, 18 to 20 minutes. Serve hot.
