Jackfruit BBQ Sandwiches

Jackfruit BBQ Sandwiches use canned jackfruit shredded and simmered in homemade barbecue sauce with sautéed onions for a tender, saucy filling. The dish combines the savory, smoky flavors of BBQ with a slight tang from a fresh cabbage cilantro slaw dressed with lime juice. Served on buns with pickles and fixings, these sandwiches offer a satisfying plant-based alternative with distinct textures between the soft jackfruit and crisp slaw.

Description

Jackfruit BBQ Sandwiches rely on canned jackfruit that is pulled apart to imitate shredded meat. Slowly cooked with sautéed onions and homemade barbecue sauce, the jackfruit absorbs the sauce's flavor while softening into a tender texture. The addition of water during cooking helps keep the mixture moist and prevents sticking.

The accompanying slaw combines shredded cabbage with chopped cilantro, lime juice, olive oil, salt, and pepper, creating a fresh, bright contrast to the rich, tangy barbecue jackfruit. Assembled on slider or hamburger buns with pickles and other chosen fixings, the sandwich balances smoky, savory, and acidic elements.

This sandwich is a versatile plant-based option suitable for casual meals, providing a satisfying texture contrast between the tender jackfruit and crisp cabbage slaw. The recipe includes simmering and careful layering of flavors to develop a nuanced barbecue taste.

Ingredients

Jackfruit Sandwiches

  • barbecue sauce homemade
  • 1 tablespoon extra-virgin olive oil
  • 1 yellow onion thinly sliced, small
  • ¼ teaspoon salt sea salt
  • 1 jackfruit 20-ounce can, drained
  • ½ cup water
  • 8 slider bun or 6 hamburger buns
  • pickles mustard, serrano peppers, etc, desired fixings

Slaw

  • 2 cups cabbage shredded
  • ¼ cup cilantro chopped
  • ½ tablespoon lime juice
  • ½ teaspoon olive oil
  • salt sea salt; freshly ground black pepper
  • black pepper sea salt; freshly ground black pepper

Instructions

  1. Prepare the jackfruit by pulling shredding the pieces with your hands, discarding any harder pieces of the core.
  2. In a large skillet, heat 1 tablespoon of olive oil to medium heat. Add the sliced onion and salt and cook, stirring occasionally, until soft, 8 to 10 minutes, turning down the heat as necessary. Next, add the shredded jackfruit and cook 5 minutes, stirring occasionally. If necessary, add a splash of water to keep it from sticking to the pan. Stir in the ½ cup water and half of the BBQ sauce. Turn the heat to low, cover, and let simmer for 20 minutes. Remove the cover and stir in half of the remaining BBQ sauce, reserving the rest for serving.
  3. Make the slaw: In a medium-large bowl, combine the cabbage, cilantro, lime juice, olive oil, and pinches of salt and pepper.
  4. Serve the sliders with the jackfruit, the remaining BBQ sauce, the slaw, and desired fixings.
