Jalapeno Cheddar Corn Bread

This Jalapeno Cheddar Corn Bread mixes cornmeal, flour, and sugar with diced jalapeños and shredded cheddar cheese for a moist and flavorful quick bread. The combination of spicy jalapeños and sharp cheddar cheese adds a savory kick to the classic sweet corn bread base. Baking in an 8x8 pan yields a tender crumb with a slightly crisp golden crust, ideal for pairing with hearty meals or enjoying as a snack.

Description

Dry ingredients including cornmeal, all-purpose flour, sugar, baking powder, and salt are combined separately from the wet mixture of milk, melted butter, and egg. The two are mixed just until combined to retain moisture and tenderness. Finely diced jalapeño peppers and shredded cheddar cheese are folded into the batter, distributing savory heat and creamy sharpness throughout.

The batter is poured into a greased 8x8 baking dish and baked at 350°F until a toothpick inserted in the center comes out clean, typically 20 to 25 minutes. The crumb offers moistness from the milk and butter, balanced by the textural grain of the cornmeal and pockets of melted cheese and jalapeño.

This corn bread complements soups, chilis, or barbecue dishes. The level of spice can be adjusted by modifying the amount of jalapeño used or removing seeds entirely for milder flavor.
