Jalapeño Cheddar Stuffed Meatloaf
Description
This recipe calls for mixing seasoned ground beef with bread crumbs, milk, egg, Italian seasoning, Worcestershire sauce, salt, black pepper, and minced jalapeños until uniform. Half the mixture forms the base in a greased baking pan; a whole 8-ounce cheddar brick is placed in the center, then the remaining meat is shaped over it and sealed to encase the cheese completely.
A glaze made from ketchup, brown sugar, Worcestershire sauce, red wine vinegar, minced garlic, salt, cayenne pepper, and jalapeño slices is spread over the top before baking. The oven is preheated to 350°F, and the meatloaf is cooked until fully done, allowing the cheese inside to melt while the exterior firms with the glaze forming a slightly caramelized coating. The result is a meatloaf featuring a tender texture infused with heat from jalapeños and creamy melted cheddar inside.
This dish can be served as a comforting entrée paired with vegetables or mashed potatoes. The spicy glaze with hints of sweetness balances the richness of the beef and cheese, while the jalapeños add a noticeable but controlled heat.
