Ingredients

Servings

for the burger patties

  • 500 g (1lb) ground beef or beef mince
  • ¼ cup panko breadcrumbs
  • 1 egg beaten
  • 1 tsp smoked paprika
  • 1 tsp oregano dried
  • 1 tsp garlic powder
  • ½ tsp chili flakes
  • 1 teaspoon salt
  • black pepper to taste

for the jalapeño poppers

  • 4 jalapeño peppers halved and seeds removed, fresh
  • 100 g (3oz) cheddar cheese grated, mature
  • 100 g (3oz) mozzarella cheese grated
  • 8 Bacon strips, streaky
  • 2 cups cheese or cheese slices, grated

for the bacon

  • 4 sesame seed buns halved and toasted
  • mayonnaise
  • lettuce shredded

Instructions

  1. To make the poppers, pre-heat the oven to 200°C/390°F and line a baking tray with baking paper/foil.
  2. Halve the jalapeños and remove the seeds.
  3. Stuff with the grated cheese then wrap with strips of bacon.
  4. Place onto a parchment paper-lined baking sheet then place in the oven. Allow to bake for 15-20 minutes until the bacon is crisp and golden and the cheese is melted.
  5. In a large bowl, combine the beef, bread crumbs, beaten egg and seasonings. Mix well then form into burgers.
  6. Heat a large skillet or frying pan over medium-high heat. Add a splash of olive oil then add the burgers.
  7. Cook for 4-5 minutes (depending on thickness) per side until a good crust has formed. Flip then top with cheese and place a lid on the pan to allow the cheese to melt.
  8. Once the patties and poppers are cooked, toast the buns then build the burgers.
  9. Add a generous smear of mayonnaise to the buns then add shredded lettuce and the burger patties.
  10. Top with the jalapeño poppers and sandwich with the tops of the buns.
  11. Serve immediately.
