Jalapeno Popper Chicken

Jalapeno Popper Chicken features boneless, skinless chicken breasts filled with a mixture of cream cheese, shredded cheddar, and diced jalapenos. Each breast is seasoned, wrapped tightly with two slices of bacon, and baked to cook the chicken through and crisp the bacon. The spicy cheese filling provides a creamy contrast to the smoky bacon exterior.

Description

The recipe begins by combining softened cream cheese, cheddar cheese, diced jalapenos with seeds removed, and garlic powder into a cohesive filling. A pocket is cut into each chicken breast, which is stuffed with this flavorful mixture. The chicken is seasoned with salt and pepper, then wrapped with bacon slices which not only add smoky flavor but also help keep the filling secure and add crisp texture once cooked.

Baking at 375°F for 30 minutes cooks the chicken thoroughly and crisps the bacon. Additional broiling can further crisp the bacon if desired. Resting the chicken for five minutes after baking allows juices to redistribute, enhancing tenderness. The combination of creamy, spicy filling with savory bacon complements the mild chicken, making this dish rich and flavorful with a balance of textures.
