  • 4 chicken breast
  • 4 ounces cream cheese (softened)
  • 2 jalapeno pepper seeded and diced
  • 1/4 cup cheese plus 2 tablespoons, shredded
  • 1 cup bread crumbs (crushed crackers, chips or plain cereal)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350 and grease a baking dish.
  2. In a small mixing bowl, combine cream cheese, jalapeno peppers and 1/4 cup of the shredded cheese. Set aside.
  3. Place 1 chicken breast between a folded piece of plastic wrap. Use a meat tenderizer to flatten the breast to 1/2" thickness.
  4. Remove the plastic wrap and spread 1/4 of the cream cheese mixture onto the center of the chicken breast.
  5. Roll the chicken breast and place into the crushed breading, evenly coating.  If necessary, use toothpicks to keep the chicken breast rolled up.
  6. Place chicken into the prepared pan and bake for 40-45 minutes or until the chicken is no longer pink.
  7. Top with 2 tablespoons shredded cheese and let set for 2 minutes before serving.

Notes

  • Use toothpicks if needed to secure the rolled chicken breasts during baking to prevent unrolling.
  • Allow the melted cheese topping to rest for a couple of minutes after baking to set before serving.
  • This dish can be prepared ahead by assembling the stuffed breasts and refrigerating before baking.
