Jamaican Curry Powder
Description
This Jamaican Curry Powder recipe begins by toasting whole spices such as coriander seeds, cumin seeds, yellow mustard seeds, fenugreek seeds, pimento berries, and black peppercorns until fragrant. Cooling the spices prevents loss of volatile oils during grinding. The toasted whole spices are then ground together with pre-ground turmeric, ginger, nutmeg (optional), ground chili, and cinnamon to form a vibrant spice mix.
The combination creates a seasoning with warmth from turmeric and cinnamon, pungency from mustard and peppercorns, and subtle heat from the chili powder. This curry powder adds characteristic Jamaican flavor to dishes like stews, soups, and dry rubs.
Stored in an airtight container, the powder retains its potency for about six months. Using it sparingly at first allows adjustment to taste, and it often benefits from blending with liquids before adding to recipes. Jamaican dishes using this powder include curried goat, steamed cabbage, and various punches, showcasing its versatility.
