Jamaican Green Seasoning
Description
Jamaican Green Seasoning combines fresh herbs such as cilantro, parsley, chives, green onions, and thyme with aromatic ingredients like garlic, ginger, onion, lemon juice, and chili pepper to create a flavorful seasoning paste. The ingredients are blended or pulsed together to a coarse or smooth texture, depending on the method used, and water is added as needed to adjust the consistency. This seasoning is versatile and commonly used as a marinade or flavor base for meats, seafood, and vegetables in Caribbean cooking.
The paste provides a distinct herbal brightness from the fresh cilantro and parsley, complemented by the sharpness of green onions and the subtle heat from the chili pepper. Lemon juice adds a citrusy acidity that brightens the overall flavor profile. The preparation involves thoroughly cleaning and drying the fresh herbs to maintain a vibrant color and ensuring the woody stems are removed for better texture.
This green seasoning can be stored refrigerated for about a week or frozen for longer periods. When frozen, it can be portioned into ice cube trays for convenient use in stews, sauces, or marinades. Over time, the bright green color will darken slightly, which is normal and does not affect the flavor.
