  • 4-6 Scotch bonnet peppers chopped
  • 1 red onion chopped, small
  • 4-6 garlic chopped, cloves
  • 4 green onion end trimmed, stalks
  • 1/4 cup soy sauce
  • 1/4 cup vinegar (optional - use white vinegar or apple cider vinegar, to your preference)
  • 2 tablespoons olive oil
  • lime juice from half lime
  • 1 tablespoon ginger freshly grated
  • 2 tablespoons brown sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon thyme or use fresh, if available, dried
  • salt I usually use 1 teaspoon salt and 1 tablespoon black pepper, to taste

Instructions

  1. Add all of the ingredients to a food processor. Process until smooth, or until you achieve the consistency you desire.
  2. Use immediately. Store the leftovers in the refrigerator in an airtight container.

Notes

  • Scotch bonnet peppers provide medium-hot heat comparable to habaneros.
  • Increase heat by adding more Scotch bonnets or hotter chili flakes.
  • Reduce heat by using fewer Scotch bonnets or substituting with milder peppers.
