Jamaican Jerk Sauce Recipe
Description
This Jamaican Jerk Sauce is created by finely blending ingredients including yellow onion, green onions, garlic, fresh ginger, Scotch bonnet pepper, and a variety of spices such as allspice, cinnamon, nutmeg, and cloves. The addition of soy sauce, lime juice, apple cider vinegar, brown sugar, and honey provides layers of acidity and sweetness, while salt and black pepper round out the flavor profile.
Typically processed to a moderately smooth yet slightly chunky texture, the sauce offers a concentrated burst of traditional Jamaican jerk flavors. It can be used as a marinade or condiment for grilling or roasting.

Ingredients
- 1 yellow onion roughly chopped, medium to large; or red onion
- 4 green onion roughly chopped, aka scallions
- 5 cloves garlic , peeled
- 1 inch fresh ginger root peeled and sliced, piece
- 1 scotch bonnet pepper use more if you like it REALLY hot, omit or only use a portion if you don't like a lot of heat), seeds discarded (use gloves, or habanero pepper
- 1 tablespoon neutral tasting oil (e.g. avocado, canola, peanut)
- 2 tablespoons soy sauce
- 3 tablespoons lime juice freshly squeezed
- 1 tablespoon apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1 tablespoon thyme or 1 teaspoon dried, fresh leaves
- 1 tablespoon ground allspice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cloves ground
- 2 teaspoons salt
- 1 teaspoon black pepper freshly ground
Instructions
- Place all of the ingredients in a food processor or blender, then pulse the ingredients until you reach the desired consistency. (Generally jerk sauce is a smooth/slightly chunky sauce but you can opt for a chunkier sauce or a smoother sauce depending on how you prefer it). Store in the fridge in an airtight jar where it will keep for up to a week.Makes approx. 1 1/2 cups
