Japanese Carrot Ginger Dressing
Description
This dressing combines freshly grated carrots and ginger with rice vinegar, tamari soy sauce, toasted sesame oil, and water. The ingredients are blended until mostly smooth but retaining some texture for body. The taste balances the sweetness and earthiness of carrots with the spicy warmth of ginger, acidity from rice vinegar, savory tamari, and the nutty aroma of toasted sesame oil.
The dressing can be used to complement greens, grain bowls, or as a flavorful dip. Its fresh vegetable base gives it a brightness and complexity beyond standard vinaigrettes. It is made in a blender or food processor for ease and consistency.
After preparation, refrigerate the dressing and it will keep for about a week, allowing time for flavors to meld further.
