Description
Whole eggs are boiled gently for 7 minutes after reaching a boil, then cooled quickly in cold water to stop cooking and facilitate peeling. The eggs are peeled carefully, mashed with mayonnaise and optional Dijon mustard, and seasoned with salt, pepper, and chopped green onions for freshness. This mixture results in a smooth and richly flavored egg salad.
The spread is layered evenly onto white bread slices, which can be crustless, and the sandwich is pressed gently and sliced for serving. The bread's soft texture complements the creamy egg filling, creating a balanced mouthfeel typical of Japanese convenience store egg sandwiches.
These sandwiches are often eaten fresh for best texture but can be prepared ahead. They offer a simple yet satisfying option that highlights delicate egg flavor enhanced by Japanese-style mayonnaise.
Ingredients
- 2 egg large
- 1 ½ tablespoon mayonnaise Kewpie brand
- ¼ teaspoon Dijon mustard optional
- salt to your taste, sea salt
- t black pepper to your taste
- 1 tablespoon green onions chopped
- 2 lices white bread or shokupan
Instructions

- Add eggs into a small saucepan or pot and cover with water.
- Bring to a boil over high heat. Once boiling, reduce the heat to minimum and cook for 7 minutes.
- Drain the eggs and immediately rinse with cold water (to stop the cooking).
- Gently tap all over the surface of the egg and peel off the egg shell. (Tip: I find it easier to do this under running cold water, or in an ice bath).
- Repeat with the remaining egg.
- Add the peeled eggs into a medium bowl.
- Use a fork to mash the eggs.
- Add kewpie mayonnaise, Dijon mustard, salt and pepper (to your taste), green onions and give it a mix to combine thoroughly.
- Spread the egg salad mixture evenly onto a slice of white bread.
- Add the second slice of bread on top and gently press down.
- Slice in half and serve.
- If you prefer, you can trim off the crusts prior to serving.
