Japanese Ginger Pork Stir Fry Recipe

This Japanese Ginger Pork Stir Fry features tender pork tenderloin slices tossed with thinly sliced onions in a savory, sweet ginger sauce made from soy sauce, mirin, garlic, and freshly grated ginger. The pork is coated lightly with cornstarch and white pepper before stir-frying to create a slightly crisp exterior while retaining juiciness inside. The ginger sauce thickens around the meat and onions, offering a balanced umami and sweet flavor that pairs well with rice and sautéed vegetables.

Description

Japanese Ginger Pork Stir Fry uses pork tenderloin, cut into thin slivers, coated with cornstarch and white pepper to develop a light crust when stir-fried. Onions sliced into thin slivers add sweetness and texture, while a sauce combining soy sauce, mirin, sugar, grated ginger, and garlic coats the pan ingredients, creating a glossy glaze. Cooking involves quick stir frying on high heat to brown the pork edges and sear the onions, finishing with simmering to thicken the sauce.

The dish is commonly served warm alongside steamed rice and sautéed vegetables, making a complete meal with a good balance of protein, vegetables, and flavorful sauce. Its bright ginger and soy notes provide a satisfying savory taste with a mild sweetness from the mirin and sugar, complementing the tender pork.

For storage, let the stir fry cool completely before transferring to an airtight container. It can be refrigerated for up to 3-4 days, allowing for convenient meal prep or leftovers.

Ingredients

Servings
  • 2 tablespoons neutral cooking oil coconut or avocado oil, generic cooking oil
  • 16 ounce pork tenderloin
  • 1 cup onion sliced thin
  • 3 tablespoons cornstarch
  • ½ teaspoon white pepper
  • 7 tablespoons soy sauce
  • 4 tablespoons mirin
  • 4 tablespoons granulated sugar
  • 3 tablespoons ginger or ginger paste, freshly grated
  • 3 tablespoon garlic paste
  • scallion sesame seeds, optional garnish, sliced

Instructions

  1. Slice the pork loin into ¼ inch rounds. Then slice each round into slivers. Sprinkle cornstarch and white pepper over the pork loin and toss to coat the strips in the cornstarch.
  2. Slice the onion into ¼ slivers and grate fresh ginger.
  3. In a small measuring pitcher, combine the soy sauce, mirin, granulated sugar, ginger, and garlic paste. Mix well.
  4. Set a large skillet (or wok) over medium-high to high heat. Pour the oil into the skillet and swirl around the pan. Once hot, place the pork strips into the skillet and stir fry for 2-3 minutes, until the edges are brown.
  5. Add the onions and continue to stir fry for 1-2 minutes until the onions are seared around the edges.
  6. Then pour the ginger sauce into the pan. Toss and simmer the pork and onions in the ginger sauce for 2-3 minutes until the sauce thickens around the pork.
  7. Serve warm with rice and sautéed vegetables on the side.

Notes

  • Allow the stir fry to cool before placing it in an airtight container to maintain quality.
  • Store cooked stir fry in the refrigerator for up to 3-4 days for safe consumption.
