Description

This salad uses strawberry gelatin dissolved in boiling water as the base, which sets into a firm but tender gel that holds various fruits together. The shredded peeled apple and chopped bananas are tossed in lemon juice to maintain freshness and color. Canned crushed pineapple and sweetened strawberries add natural sweetness and juice while the whole cranberry sauce provides a unique tart texture and flavor contrast within the salad.

  • 1 medium apple , peeled and grated
  • 2 banana chopped
  • 1 teaspoon lemon juice
  • 6 ounces strawberry gelatin dessert Jell-O brand
  • 2 cups water boiling
  • 40 ounces pineapple undrained, crushed
  • 16 ounce tub strawberry slightly drained, sweetened
  • 14 ounce can cranberry sauce whole
  • Whipped Cream , for topping, optional
  • pecans , or walnuts, for topping, optional

Instructions

  1. Add the shredded apple and chopped bananas to a bowl and toss in lemon juice.
  2. Empty Jello-O packets into a large bowl. Add 2 cups boiling water and stir well until Jello-O is dissolved.
  3. Add crushed pineapple and strawberries and stir to combine.  Stir in whole cranberry sauce. Stir in shredded apple and chopped bananas. 
  4. Pour into desired serving dish--I use a 9x13'' pan, but you could put it in a trifle or other dish-- and refrigerate for several hours or until firm.
  5. Serve with a dollop of whipped cream and chopped walnuts or pecans, if desired.

Notes

  • Jello Fruit Salad can be prepared 1 to 3 days ahead and kept refrigerated to allow flavors to meld.
