Jiffy Cornbread Casserole Recipe

This Jiffy Cornbread Casserole blends creamed corn, whole kernel corn, sour cream, eggs, and corn muffin mix into a rich, moist casserole with a lightly golden top. The casserole is baked until set but tender, making it a hearty side dish suitable for casual meals or gatherings.

Description

The Jiffy Cornbread Casserole combines softened butter with two types of corn—cream-style and whole kernel—to provide a creamy texture with occasional corn kernels. Sour cream and eggs bind the mixture, while the corn muffin mix adds lightness and a subtle cornbread flavor. Baking the mixture in a greased 9x13 inch dish produces a casserole with a soft interior and a slightly golden crust on top. The dish is typically sliced into squares for serving, pairing well with a variety of mains.

Once prepared, this cornbread casserole stores well in the refrigerator for up to a week and can also be frozen. Reheating individual portions in an air fryer crisps the exterior while keeping the inside moist, offering a pleasing texture contrast.

  • 1 oz can cream-style corn undrained, 425 g
  • 1 oz can corn drained, 425 g
  • 1 cup sour cream 220 g
  • 2 egg
  • 1 .5 oz box corn muffin mix we used Jiffy brand
  • ½ tsp salt

Instructions

  1. Prep: Preheat oven to 375°F (186°C). Grease a 9x13 inch (or similar) casserole dish.
  2. Mix: In the microwave, soften the ½ cup unsalted butter for 15 seconds. In a large bowl stir together 1 15-oz can cream-style corn, 1 15-oz can corn, 1 cup sour cream, 2 eggs, 1 8.5 oz box corn muffin mix, and ½ tsp salt.
  3. Bake: Transfer dough to prepared casserole dish, smoothing out the surface. Bake for 30 to 45 minutes, or until the top is a bit golden brown and the center no longer jiggles.
  4. Serve: Let cool slightly, then cut into squares and serve warm.

Notes

  • Store leftovers in an airtight container in the fridge for up to one week.
  • Freeze portions to extend shelf life and reheat them in an air fryer for a crispy edge and warm interior.
