Description

This casserole starts with a layer of large canned biscuits pressed into a baking pan and baked until lightly browned. Ground beef is browned and cooked with taco seasoning, diced onions, and red bell peppers until flavorful and tender. This beef mixture is spread atop the biscuit base, followed by a layer of diced tomatoes with green chiles for a touch of acidity and mild heat.

A final layer combines sour cream, mayonnaise, and half of the shredded cheddar cheese, spread over the tomatoes. This adds a creamy texture and mild sharpness, which contrasts with the spicy and fresh layers beneath. The casserole is baked to meld the layers and melt the cheese.

The casserole can be served hot as a fulfilling dinner and pairs well with simple side salads or steamed vegetables. It stores in an airtight container for up to five days, making it suitable for leftovers.

  • 1 can Biscuit 16 ounces, large
  • 2 Pounds ground beef
  • 1 packet taco seasoning 1 ounce
  • 3/4 cup water
  • 1 onion diced
  • 1 red bell pepper diced
  • 1 can diced tomatoes with green chiles
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup cheddar cheese divided, shredded

Instructions

  1. Preheat an oven to 350 degrees Fahrenheit and spray a 9X13 baking pan with a non-stick cooking spray.
  2. Place the large biscuits into the bottom of the pan in a single layer on the bottom of the pan and halfway up the sides of the pan.  Make sure to press the biscuits together to form a single layer.
  3. Bake the biscuit layer for 12-15 minutes until the dough is lightly browned.  Remove from the oven but leave the oven on.
  4. Brown the ground beef in a large skillet over medium high heat.  Drain off any excess grease.
  5. Stir in the taco seasoning, water, diced onions and diced red bell pepper.
  6. Bring the mixture to a low simmer and cook, covered, for 8-10 minutes until the onions and peppers are soft.
  7. Then pour the beef mixture on top of the biscuit layer in the baking pan.
  8. Spread the diced tomatoes with green chiles over the beef layer.
  9. In a separate bowl, stir together the sour cream, mayonnaise and half of the shredded cheese.  Spread this mixture on top of the tomatoes in the baking pan.
  10. Top with the remaining shredded cheese. Bake until the cheese is bubbling and beginning to brown slightly (20-25 minutes).
  11. Let the casserole sit for 10-15 minutes.  Then it’s ready to slice, serve and enjoy!

Notes

  • Refrigerate leftovers in an airtight container for up to 5 days to maintain freshness.
