Jordan Pond Popovers Recipe
Description
The Jordan Pond Popovers recipe combines milk, flour, baking powder, salt, and eggs blended until smooth and rested to improve texture. Baking involves an initial high temperature to puff the batter rapidly and a subsequent reduction to finish cooking with a crisp and golden crust. The result is a hollow, lightweight popover perfect for filling or topping.
The accompanying blackberry jam butter enriches the popovers with fruit sweetness and creamy softness, made by whipping room temperature butter with blackberry jam until fully combined. A salted caramel sauce made from sugar cooked to caramel, finished with butter, cream, and salt, adds a luscious, balanced sweetness ideal for drizzling over the popovers.
Serving these popovers warm highlights their crispy shell and tender interiors. This recipe yields multiple servings and can be doubled if desired. Resting the batter and carefully preheating the pans contribute significantly to the rise and texture.
Note that the caramel sauce requires attention to sugar caramelization, and the batter resting time improves the final popover quality. Following the temperature schedule during baking ensures even cooking and a well-formed popover shape.
Ingredients
Popovers:
- 1½ cups milk whole
- 1¾ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 3 egg room temperature
- non-stick baking spray
Blackberry Jam Butter:
- 1½ ticks butter room temperature
- ⅓ cup blackberry jam
Caramel Sauce:
- 1 cup granulated sugar
- 6 tablespoons butter at room temperature and cut up into pieces, unsalted
- ½ cup heavy cream
- 1 teaspoon salt
Instructions
Popovers:
- Microwave the milk for 2 minutes, just until it's lukewarm.
- Add the ingredients: milk, flour, baking powder, salt, and eggs to a blender and blend until smooth. Stop, scrape the blender sides, and mix until everything is combined and smooth. Let the batter rest for about an hour at room temperature.
- Preheat the oven to 450 degrees F. Generously spray the popover pan with baking spray and also preheat it. Fill each popover cup almost to the top with batter.
- Place the popover pan on a baking sheet and transfer to oven.
- Bake at 450 F degrees for 15 minutes. Then, reduce the oven temperature to 375 F degrees and bake for another 17-20 minutes or until the popovers are golden brown.
- Remove from oven and serve warm.
Blackberry Jam Butter:
- While the popovers are baking, work on the blackberry butter. In the bowl of an electric mixer on medium speed, whip the butter for one minute, add the blackberry jam, and whisk until combined, making sure to stop the mixer and scrape the bowl walls with a rubber spatula.
- Using an ice cream scoop, scoop the butter onto a plate and set aside.
- Serve with warm popovers.
Notes
- Resting the batter for about an hour at room temperature improves popover texture.
- Preheat the popover pans and spray generously to prevent sticking and aid rise.
- The caramel sauce requires careful melting and stirring of sugar before adding butter and cream.
- This recipe can be doubled for larger batches, considering pan capacity and cooking time adjustments.
