Juicy Bacon Burger
Description
This burger recipe starts by chopping bacon into pieces and freezing briefly for easier processing into a fine grind. The bacon is mixed thoroughly with ground beef and a combination of spices including garlic powder, onion powder, smoked paprika, dried parsley, black pepper, red pepper flakes, and kosher salt. This integration of bacon into the beef ensures even distribution of smoky flavor and fat, contributing to juiciness.
Patties are formed thick with a thumb dimple to prevent swelling during cooking. Cooking takes place in a well-seasoned cast-iron skillet without additional oil if seasoned properly, promoting a nice crust. They are cooked about 4-5 minutes per side to achieve doneness without overcooking, maintaining tenderness inside.
This approach results in burgers that combine the savoriness and fat from bacon with classic ground beef, enriched by aromatic spices. They can be served immediately with preferred toppings or condiments.
Bacon can be par-cooked in the microwave to ensure it is fully cooked before mixing if desired, eliminating the need to chop and freeze. Leftover burgers keep for several days refrigerated and can be frozen for longer storage, with reheating recommended at reduced power to maintain juiciness.
Ingredients
- 4 ounces Bacon
- 1 pound ground beef 85/15, lean
- 1 teaspoon kosher salt or ½ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon parsley dried
- ½ teaspoon red pepper flakes
Instructions
- Cut the bacon into pieces and freeze the pieces for 20 minutes to make them easier to process.
- Process the bacon in a mini food processor on the "chop" setting until finely ground.
- Mix the ground bacon into the beef with salt, pepper, garlic powder, onion powder, smoked paprika, dried parsley, and red pepper flakes.
- Form the mixture into four ¾-inch-thick patties. Use your thumb to make a shallow dimple in the middle of each burger. This helps them retain their shape.
- Heat a well-seasoned cast-iron skillet over medium heat for about 3 minutes. Add the burgers. If the skillet is well-seasoned, there's no need to add oil. Otherwise, add a tablespoon of oil to the pan before adding the burgers.
- Cook the burgers until cooked through, for about 4-5 minutes per side over medium heat.
- Serve immediately with your favorite toppings.
Notes
- Bacon can be par-cooked in the microwave for three minutes on paper towels to ensure it cooks fully before mixing.
- For a fattier, richer burger, try mixing equal parts ground beef and ground bacon, though using less bacon results in a moderately leaner burger.
- The nutrition information refers to burger patties without toppings.
- Store cooked burgers in an airtight container in the refrigerator for 3-4 days and reheat gently in the microwave at 50% power.
- Burgers can be frozen for up to three months; thaw overnight in the fridge before reheating.
