Description
Juicy Boneless Chicken Breasts are made by marinating skinless, boneless chicken breasts in a mixture of olive oil, minced garlic, honey, smoked paprika, lemon juice, salt, and black pepper. The marinade infuses the chicken with sweet and smoky flavors along with a bright citrus finish. The chicken is scored on the bottom to encourage even cooking and better absorption of the marinade.
After marinating, the chicken is baked at a high temperature (400°F/207°C) just until cooked through, ensuring the meat stays moist and tender. To add texture and a slight char, the chicken is briefly broiled at the end of baking. Fresh parsley is sprinkled on top for herbal freshness, and lemon wedges are served alongside to add brightness when squeezed over the chicken.
Serving the chicken with its own flavorful juices preserves moisture and adds richness. Checking doneness by cutting into the thickest part prevents overcooking, which would dry out the meat. This method produces a tender, juicy chicken breast suitable for many meals.
Ingredients
- 1 lb (500g) chicken breast skinless and boneless
- 1 tablespoon olive oil
- 2 - 3 cloves garlic minced
- 1 1/2 tablespoons honey
- 1/4 teaspoon smoked paprika
- 2 tablespoons lemon juice
- 1/4 teaspoon salt or more to taste
- 3 dashes black pepper ground
- 1 tablespoon parsley chopped
- lemon for serving, wedges
Instructions
- Preheat oven to 400° F (207°C). Pat dry the boneless chicken breasts with paper towels. Score the bottom of the chicken.
- Drizzle the olive oil on the chicken, add the minced garlic and rub all over the chicken breasts.
- Add honey, smoked paprika, lemon juice, salt and ground black pepper to the chicken. Stir to combine well with the chicken. Set aside and marinate for 15 minutes.
- Transfer the chicken breasts to a baking dish lined with parchment paper. Bake at for 15-18 minutes, or until the inside of the chicken breasts are cooked through.
- Change the oven setting to broil and broil the chicken for 1 - 2 minutes or until the surface becomes slightly charred. Remove from oven, top with chopped parsley and serve immediately with fresh lemon wedges. (DO NOT discard the juice seeping out of the chicken. Serve the chicken with the juice.)
Notes
- Do not overcook the chicken; it should reach an internal temperature of 165°F and be opaque at the thickest part.
- Cut a slit into the thickest part of the chicken to check doneness instead of relying solely on time.
- Serve the chicken immediately with the juices that accumulate during baking for best moisture and flavor.
