Junior’s Reuben Sandwich

Junior’s Reuben Sandwich features grilled rye bread layered with hot corned beef, sauerkraut, and Swiss cheese. The sandwich is cooked on a skillet or grill, melting the cheese and warming the sauerkraut and beef for a hearty, savory flavor. The slightly crispy grilled bread contrasts with the warm, tender filling for a satisfying sandwich experience.

Description

The Junior's Reuben Sandwich is prepared by grilling slices of rye bread lightly buttered on one side. Corned beef and sauerkraut are heated separately on the grill or skillet before assembling the sandwich. The sandwich layers the corned beef, sauerkraut, and Swiss cheese between the grilled sides of the rye bread. It is then cooked further, turning once, until the cheese melts and the sandwich is warm throughout. The result is a warm, slightly crisp sandwich with melted cheese binding the tangy sauerkraut and seasoned beef together.

The sandwich is meant to be served immediately after cooking to preserve the melted cheese texture and the contrast of crunchy bread with a moist, flavorful filling. The combination of rye bread, corned beef, and sauerkraut offers classic Reuben flavors rendered in a straightforward pan-grilled style.

Ingredients

Servings
  • 2 tablespoons butter unsalted
  • 2 lices rye bread
  • 6 ounces corned beef lean
  • 1/2 cup sauerkraut drained fresh
  • 4 lices swiss cheese

Instructions

  1. Melt the butter on a hot grill or in a large skillet. Grill both slices of bread on one side. At the same time, grill the corned beef in one stack and the sauerkraut in another. Cook until both are heated through. Turn over one slice of the bread on the grill. Stack on the corned beef, top with the sauerkraut, then the cheese, and the second slice of bread, grill side down. Continue grill the Reuben until it's hot and melted, turning the sandwich over once. This usually takes place in 5 to 7 minutes. Serve immediately, hot off the grill.
