Kakro

Kakro (or kaklo) is a delicious traditional Ghanaian fried snack made from very ripe plantain fritters.

Ingredients

Servings
  • 4 plantain very ripe
  • 1 cup all-purpose flour
  • 1 small onion , finely grated
  • 1 tablespoon ginger chopped fresh
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • vegetable oil (for frying)

Instructions

  1. Peel the plantains and place them in a bowl.
  2. Mash them with a fork until obtaining a lumpy mixture.
  3. Add the onion, ginger, salt, cayenne pepper and mix well with a spatula.
  4. Add the flour and mix well.
  5. In a deep skillet, heat a large volume of oil over medium heat.
  6. Using a spoon, take some of the dough and dip in hot oil.
  7. Fry on both sides until golden brown.
  8. Place kakro as you go on a sheet of paper towel to remove excess oil.
  9. Serve hot or warm.
