  • cup avocado mayonnaise
  • cup Parmesan Cheese plus more for serving, freshly grated
  • 1 lemon zested and juiced
  • 1 tablespoon capers finely chopped, drained
  • 2 garlic grated, cloves
  • 1 teaspoon Dijon mustard
  • black pepper to taste, freshly ground

For the Salad

  • 1 tablespoon olive oil
  • ½ cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • 6 cups kale leaves de-stemmed, torn, packed
  • 1 avocado diced

Instructions

  1. In a medium bowl, mix mayonnaise, Parmesan, lemon zest, lemon juice, capers, garlic, mustard and black pepper.
  2. Heat olive oil in a small skillet over medium heat. Add the panko breadcrumbs, and garlic powder, and cook stirring frequently until browned and toasted, about 5 minutes.
  3. Pour the dressing over the kale and toss to combine. Add the garlic breadcrumbs and toss again to combine. Add the diced avocados and serve at room temperature.

Notes

  • This salad stores well for several days if the avocado is added just before serving to avoid browning.
