Kale Pasta Salad. A lighter pasta salad that you'll be enjoying all summer! It has a tangy parmesan vinaigrette dressing and plenty of fresh veggies.

Ingredients
- 3 cups penne pasta uncooked
- 8 ounces salami diced
- 1 cup cherry tomato halved or grape tomato
- ½ cup yellow bell pepper diced
- 2 cups kale packed, finely chopped with stems removed
- ¼ cup red onion finely diced
- salt to taste
- black pepper to taste, ground
Dressing
- ¼ cup Parmesan Cheese finely grated
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1 teaspoon garlic minced
- ¼ teaspoon Italian seasoning
- 1 teaspoon brown sugar packed
Instructions
- Cook 3 cups uncooked penne pasta to al dente according to the directions on the packager. Drain it and rinse it under cool water to stop the cooking. Let the pasta continue to drain while preparing the rest of the salad.
- Add 8 ounces diced salami, 1 cup halved cherry or grape tomatoes, ½ cup diced yellow bell pepper, 2 cups packed finely chopped kale with stems removed , and ¼ cup finely diced red onion to a large bowl and toss to combine.
- Prepare the dressing by adding ¼ cup finely grated parmesan cheese, 2 tablespoons red wine vinegar, 3 tablespoons olive oil, 1 teaspoon minced garlic, ¼ teaspoon Italian seasoning, and 1 teaspoon packed brown sugar to a small jar or container with a lid. Close it tightly and shake vigorously until it combines thoroughly.
- Add the drained pasta to the bowl and pour the dressing over the top, tossing everything together until evenly coated. Season with salt and ground black pepper to taste. Serve immediately, or cover and chill for up to an hour before serving.

- Serves 6+ depending on how much people eat.
