Kale Turkey Soup

Slow Cooker Kale Turkey Soup is made with white beans and lean ground turkey. It's a healthy, gluten free recipe that's easy to make in a crock pot!

Ingredients

Servings
  • 1 teaspoon olive oil
  • 1 cup white onion diced
  • 4 cloves garlic minced
  • 1 pound ground turkey lean
  • 15 ounce cannellini beans drained & rinsed, can
  • 4 cups chicken broth
  • 3 cups kale chopped
  • 1 teaspoon oregano dried
  • 1 teaspoon fennel seeds ground with mortar and pestle
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons Parmesan Cheese grated - optional topping

Instructions

  1. Heat the olive oil in a large pot on the stove over medium heat.
  2. Add the onion, garlic and ground turkey, cook for 8-10 minutes. Transfer to a slow cooker.
  3. Add the beans, chicken broth and kale to the slow cooker, along with the oregano, fennel, salt and pepper.
  4. Cook on low for 4-6 hours or on high for 2-3 hours.
  5. Serve the soup topped with parmesan cheese, if you'd like.

  • ½ cups of soup.
