Description
This recipe uses a 4 to 6-pound pork butt roast rubbed with salt and liquid smoke to infuse a smoky flavor reminiscent of traditional Hawaiian kalua pork. The meat is scored to allow the seasonings to penetrate and placed into a slow cooker where it cooks on low heat for 7 to 12 hours depending on your slow cooker’s efficiency. During cooking, turning the meat once helps even cooking.
When done, the pork becomes tender enough to shred easily with a fork, offering moist, flavorful meat with a smoky aroma from the liquid smoke without requiring an actual smokehouse. The slow cooking preserves juiciness while breaking down connective tissue.

- 4-6 pound pork butt roast also called pork shoulder
- 2 teaspoons salt or sea salt, Hawaiian
- 1 tablespoon liquid smoke
Instructions
- Put meat in the slow cooker. Score meat and rub salt on the meat, then add the liquid smoke.
- Cook on low for about 10-12 hours (your slow cooker may only take 7-8 hours). Turn the meat once. The meat will easily fall apart when it is done. Shred with a fork
