Ingredients
- 1/4 cup red onion thinly sliced
- 1/3 cup lime juice fresh; 80 milliliters
- lime zest from 1
- 3 cups watermelon seeds discarded, cubed
- 2 tablespoons olive oil 30 milliliters
- 4 ounces feta cheese cubed or crumbled, 113 grams
- 1/4 cup mint chopped, fresh
- salt to taste, freshly ground
- black pepper to taste, freshly ground
Instructions
- In a small non-reactive bowl, toss the thinly sliced red onion with the lime juice, lime zest, and a pinch of salt. Allow to sit at room temperature for 15 to 30 minutes.
- Place the 3 cups cubed watermelon in a large serving bowl. Use a slotted spoon to remove the onions from the lime juice and add to the watermelon. Drizzle with olive oil, a pinch of salt and pepper, and toss to coat.
- Top with cubed or crumbled feta and fresh mint leaves. Serve immediately.
