Ingredients

  • 1 cup sweet onion 1 medium onion, chopped
  • 1 cup mayonnaise I use Hellman’s (other mayos can cause separation)
  • 1 cup cheddar cheese Other cheese varieties are also delicious, see the Café Tips for other options, shredded
  • 1 tablespoon fresh herbs optional, finely chopped

Instructions

  1. Preheat the oven to 350˚F. Spray a small baking dish or 6-inch cast iron pan with non-stick cooking spray. Line a sheet pan with foil for easy cleanup. Set aside.
  2. Combine the onion, mayonnaise, cheese and 2 teaspoons of the fresh herbs (if using) in a medium size bowl. Stir well to combine.
  3. Transfer the onion mixture to the prepared pan and set the pan on the foil-lined sheet pan.
  4. Bake for 30-40 minutes until bubbly and lightly golden. (Don't bake too long as the mayo can separate.)
  5. Garnish with the remaining teaspoon of fresh herbs (if using). Serve hot and enjoy!
