Keto 90 Second Bread

This Keto 90 Second Bread is a quick, microwave-cooked loaf made from simple ingredients like butter, egg, coconut flour, and baking powder. It results in a light bread with a muffin-like texture that can be sliced and topped or toasted. Its minimal ingredients make it suitable for low-carb diets, and it can be prepared in just a few minutes without traditional baking.

Description

Keto 90 Second Bread is prepared by mixing melted butter, egg, coconut flour, baking powder, and a pinch of salt, then microwaving the mixture in a small ramekin for 90 seconds. The bread puffs up and resembles a muffin with a tender crumb. It can be sliced crosswise once cooled slightly, ready to be topped or toasted.

The microwave method offers a fast way to produce a bread-like result with a soft interior. Toasting in a buttered skillet enhances the flavor and texture, creating a golden crust that complements the softness inside. The recipe allows easy customization with favored toppings after baking.

Leftover slices can be refrigerated for up to four days or frozen. Reheating is best done by skillet toasting to revive texture, though gentle microwaving is also possible. The bread can alternatively be baked in a conventional oven at 350°F for about 10 minutes for similar results.

Note that exact baking time in the oven may vary depending on the appliance. Adjust microwave time carefully to avoid drying out the bread. Cooling the bread completely before storing prevents sogginess. This recipe provides a handy keto-friendly bread substitute when a fast preparation is needed.

Ingredients

Servings
  • 1 tablespoon butter if using salted, omit the salt, unsalted
  • Pinch salt
  • 1 egg large
  • 1 tablespoon coconut flour a level (not heaping) measuring tablespoon, 7 grams
  • ¼ teaspoon baking powder gluten-free if needed

Instructions

  1. In a small, microwave-safe bowl or ramekin (mine measures 3 inches on the bottom and 3.5 inches at the top), melt the butter in the microwave.
  2. Allow the melted butter to slightly cool, and then mix in the salt, egg, coconut flour, and baking powder. Keep mixing patiently until smooth.
  3. Microwave the mixture on high for 90 seconds. The bread will puff up while "baking" and then slightly deflate. When done, it will look like a muffin. Ensure it appears set. Otherwise, microwave it for 10-20 more seconds (but 90 seconds should be enough, and overcooking can dry it). Take care when removing it from the microwave. The ramekin will be hot.
  4. Let the bread cool slightly for a minute or so. Then, gently, with a paring knife, loosen the edges and remove the bread from the ramekin onto a plate and slice it crosswise into two slices.
  5. Top the bread with your favorite toppings and serve.

Notes

  • The bread can be baked in an oven-safe ramekin at 350°F for about 10 minutes, checking doneness with a toothpick as oven times vary.
  • Toasting the bread in a buttered skillet improves flavor and texture but is optional.
  • Store cooled bread slices in an airtight container in the fridge for up to four days; reheat gently in a skillet or microwave at half power.
  • Freeze fully cooled bread slices and thaw in a microwave or toaster before use.
