Ingredients
- 12 lices Bacon
- 4 large eggs
- 4 cups spinach
- ⅔ cup cheddar cheese
- 2 tablespoons heavy cream
- 1 tablespoon olive oil
- 1 teaspoon pepper
Instructions
- Preheat oven to 350F.
- Make bacon weave and cut into quarters.
- Flip a cupcake tray, cover in foil in the 4 corners, and lay bacon weave on foil carefully.
- Bake for 50 minutes. Remove, let cool for 10, and switch oven to BROIL.
- Crack two eggs into a bowl, add heavy cream, and scramble.
- Heat 1 tbsp olive oil in a pan and cook down spinach. Add black pepper
- When spinach is cooked, add eggs and turn heat to low. Cook.
- Fill bacon baskets with egg and spinach mixture. Top with cheese.
- Add to oven and broil until your cheese has formed a nice crust. Remove and serve.
