Ingredients

Servings
  • 1 cup mozzarella cheese shredded
  • 2 tbsp almond flour
  • 3 tbsp blueberries
  • 1 tsp cinnamon
  • 2 tsps Swerve
  • 2 egg

Instructions

  1. Heat waffle maker.
  2. In a bowl, combine all ingredients and mix well.
  3. Using a non-stick spray, coat waffle maker before placing batter inside.
  4. When chaffles are done, add blueberries or toppings of choice.
  5. The batter will make 4 mini chaffles, you can use an ice cream scoop for measurement or about ¼ cup. Just make sure not to overfill the waffle maker. Scoop 1 cup batter for Belgian style.
  6. To Freeze: Place your frozen chaffles into a freezer bag with a piece of parchment paper between each one to ensure they don’t freeze together.  You can reheat them in the microwave, air fryer or the toaster.

Notes

  • Spray. A quick spray of non-stick spray and they should come out cleanly and effortlessly.
  • Serving. The batter will make a total of 4 mini chaffles. Feel free to double up the recipe for more deliciously keto goodness!
  • Measure. You can use an ice cream scoop for measurement. Each chaffle takes about ¼ cup of batter. Just make sure not to overfill the waffle maker.
  • Waffle Maker. This recipe works best with a mini waffle maker, but you can get away with a standard sized waffle maker. You’ll just have to use 1 cup batter per chaffle.
