Ingredients
- 2 cups almond flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup coconut oil or olive oil
- 1/4 cup keto-friendly sweetener
- 3 large eggs
- 1 teaspoon fresh lemon zest
- 1/2 cup blueberries
Instructions
- Preheat oven to 350°F. Line a cupcake pan with paper liners and set aside.
- Mix almond flour, salt, and baking powder together in a large bowl.
- Toss in oil, sweetener, eggs, and lemon zest. Mix to combine fully.
- Add in blueberries.
- Evenly fill up each cup.
- Bake until a toothpick inserted in the center of the muffin comes out clean, about 20 to 22 minutes.
- Allow muffins to cool for at least 5 to 10 minutes before serving.
- Store leftovers at room temperature in an airtight container.
