Keto Broccoli Cheese Soup is comfort food in a bowl without all the carbs. It is an easy, cheesy, keto soup that is the perfect way to warm up on a cold day.

Ingredients

  • 1 tablespoon butter
  • ¼ cup onion finely diced
  • 2 cloves garlic finely minced
  • 2 cups chicken broth
  • 2 cup heavy cream
  • 12 ounces cheddar cheese sharp
  • 4 cups broccoli cup into bite-sized pieces, florets

Instructions

  1. Add butter to your soup pot and heat over medium high heat until melted.
  2. Add the diced onions and cook for 4-5 minutes until softened, then add garlic and continue cooking for 1 minute.
  3. Pour in chicken broth and heavy cream and bring to a simmer.
  4. Add ½ of the broccoli and let cook for 10 minutes. Then use an immersion blender to blend the broccoli.
  5. Add cheddar cheese stirring until fully melted and smooth.
  6. Add the remaining broccoli, reduce to low heat and let simmer for 20 minutes until the broccoli pieces are softened.
  7. Serve immediately or cool and refrigerate for later.
