Description
This salad starts with frying bacon until crisp and crumbling it into small pieces. The dressing is whisked together from mayonnaise, sour cream, apple cider vinegar, confectioners sugar substitute, salt, and pepper to achieve a creamy yet tangy flavor. The raw broccoli florets, minced red onion, toasted pine nuts, and bacon are combined into the dressing and tossed to coat evenly.
Allowing the salad to rest for 20 to 30 minutes lets the broccoli absorb the dressing flavors and slightly soften, enhancing the textural contrast between creaminess and crunch. Ingredients
- 4 ½ cups broccoli cut into small bite-size pieces, florets
- 8 lices uncured bacon
- ¼ cup pine nuts toasted
- ¾ cup mayonnaise
- ¼ cup sour cream
- 3 tablespoons apple cider vinegar
- ¼ cup red onion minced
- 2 tablespoons Swerve Confectioners Sugar
- salt to taste
- black pepper to taste
Instructions
- Fry the bacon in a skillet, then crumble into small bits and set aside.
- Add all the remaining ingredients into a large bowl, except the broccoli, bacon, red onion and pine nuts, and whisk to combine.
- Add in the broccoli, bacon, pine nuts and red onion over the dressing and toss to coat.
- Allow to sit for 20-30 minutes so the flavors can develop and the broccoli can absorb the dressing. The longer it sits, the better it is!
Notes
- Steaming broccoli for 2 minutes and draining well reduces rawness while preserving crunch.
- Substitute pine nuts with sunflower seeds, chopped walnuts, or slivered almonds if desired.
