Keto Brussels Sprouts with Bacon
Description
This recipe involves cooking bacon pieces until crisp in a cast iron skillet, then sautéing halved Brussels sprouts in the rendered fat to get them tender with a bit of caramelization. Garlic and spices including paprika, dried parsley, and red pepper flakes add depth and slight heat. The pan is covered briefly to help the sprouts cook through but retains some texture. Finally, the bacon is added back and the mixture cooks uncovered to crisp up a bit. Fresh shredded Parmesan cheese is sprinkled on top to add a salty, savory finish.
The dish is well balanced with smoky bacon and the earthy Brussels sprouts, accented by fragrant spices and melted cheese. It works well as a hearty side for dinners or as a warm vegetable component for ketogenic diets.
Ingredients
- 8 lices Bacon cut into 1-inch pieces
- 2 pounds Brussels sprouts washed, bottoms trimmed and cut in half
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper ground
- 1/2 teaspoon paprika
- 1/2 teaspoon parsley dried
- 1/4 teaspoon red pepper flakes
- 5 cloves garlic minced
- 1/4 cup Parmesan Cheese fresh shredded
Instructions
- Place a large cast iron skillet over medium heat. Once add the bacon pieces and cook until crispy. Once crispy, transfer to a paper-lined dish.
- Drain most of the bacon grease, leaving only about half in the pan. Then add the Brussels sprouts and cook stirring occasionally, for about 10 minutes.
- Add in the garlic, paprika, dried parsley, and red pepper flakes. Season with salt and pepper, stir, cover the pan, reduce heat to low and cook for another 10 minutes.
- Add back the bacon and stir and cook uncovered for 5 minutes.
- Top with shredded parmesan cheese and serve.
