Ingredients
- 1 medium butternut squash peeled, seeded, and halved
- 2 tbsp butter
- 1/2 onion diced
- 2 cloves garlic minced
- 4 cups chicken broth low sodium
- 1/4 cup heavy cream
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- salt and black pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Place the squash halves cut-side down on a baking sheet and roast in the oven for 30-40 minutes, or until the flesh is soft and easily pierced with a fork.
- Once the squash is cool enough to handle, scoop the flesh out of the skin and set aside.
- In a large pot or Dutch oven, melt the butter over medium heat.
- Add the diced onion and minced garlic and sauté for 5-6 minutes, or until the onion is translucent.
- Add the roasted butternut squash flesh and chicken broth to the pot and bring to a simmer.
- Let the soup simmer for 10-15 minutes, or until the squash is very tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, ground cinnamon, and ground nutmeg. Season with salt and black pepper to taste.
- Serve hot, with optional toppings if desired.
